It's originally a chicken recipe, and I'm not entirely sure what the explosion refers to -- maybe the red pepper flakes, or maybe just the way a dish based in hoisin sauce tends to burst on the tongue.
Or possibly other people's cashews explode when fried. It's a mystery.
